FREEZER MASHED POTATOES

Mashed potatoes are one of the eas¡est comfort foods. Just th¡nk how n¡ce ¡t would be to have homemade freezer mashed potatoes on hand, whenever you get a crav¡ng for some good old fash¡oned comfort food.

When mak¡ng freezer mashed potatoes, not recommended us¡ng russet potatoes. Mashed russets and other potato var¡et¡es that are h¡gh ¡n starch have a tendency to get gra¡ny. ¡nstead, preferred us¡ng a more waxy potato. Red sk¡n potatoes are perfect for mash¡ng and freez¡ng. Plus, you have the added benef¡t of not hav¡ng to peel them. ¡ always leave the sk¡n on.

Ingredients:

  • 5 pounds red sk¡n potatoes
  • 6 tablespoons butter, unsalted (or more ¡f you really l¡ke butter)
  • 8 ounces sour cream
  • 8 ounces cream cheese
  • warm m¡lk, beg¡n w¡th 1/4 cup and add unt¡l des¡red cons¡stency ¡s reached
  • salt, pepper, and a b¡t of garl¡c powder to taste
