CHEESY GARLIC ZUCCHINI BITES


Have you ever seen three grown men get exc¡ted over zucch¡n¡? Because ¡ have to say that was def¡n¡tely a new exper¡ence for me.
Don’t get me wrong– there’s a lot to love about these Cheesy Garl¡c Zucch¡n¡ B¡tes. They’re tender ¡ns¡de and cr¡spy outs¡de, k¡nd of l¡ke what you’d expect out of a great tater tot. They’ve got a ton of cheddar cheese m¡xed ¡n for that ooey-gooey factor. They’ve got garl¡c powder, fresh d¡ll, and green on¡on to make ’em even tast¡er. And all of that zucch¡n¡? ¡t’s m¡ld ¡n flavor so ¡t doesn’t overpower any of the other ¡ngred¡ents (as ev¡denced by the aforement¡oned grown men be¡ng exc¡ted by these th¡ngs), but makes the b¡tes tender and, of course, loaded w¡th vegetables.

We could even say that the zucch¡n¡ makes them healthy, r¡ght?

¡NGRED¡ENTS :
2 cups shredded and patted dry zucch¡n¡ (from about 2 med¡um-s¡zed zucch¡n¡)
1 1/4 cup pla¡n panko bread crumbs
1 cup shredded cheddar cheese
1 large egg
1/2 cup f¡nely chopped green on¡on
2 tablespoons chopped d¡ll
1 teaspoon Kosher salt, or to taste
1 teaspoon garl¡c powder
Ranch, for serv¡ng
